It's raining almost everyday here in Bangalore. So craving for evening snack with. A hot cup of coffee haunts me everyday.. But with my little champ,  every day is not possible.. Today being Friday has little relieved, so thought of making something...
Cheese my all time love was in mind today, so thought of making cheese corn poppers as surprise evening snack.. So, invested the "me" time to prepare them while Ansh was on afternoon nap...

These amazing cheese corn poppers are yummy bombs, cheese oozing and melting in mouth... Prepared within no time and with very few ingredient. I have made them earlier with a different method and was instant hit.. So here you go..:)

- 1 medium sized potato boiled and mashed
- 1/4  sweet corn boiled/microwaved for 2 mints.
- 1/4 cup finely chopped or capsicum/carrot ( optional)
- salt to taste
- 1/2 tsp. Italian seasons
-1/4 tsp. garlic paste
- a pinch of black pepper
- 3-4 tbsp. of cornflour for biding
- few leaves of freshly chopped parsley
- 3-4 tbsp. of plain flour
- 2 tbsp of plain flour and few tbsp of water to make a thick groping consistency paste
- 1/4 cup of bread crumbs

@ you can also add chilli flakes
@ freshly chopped coriander
@ oregano

In a bowl take grated cheese, add potato, capsicum/carrot, corn, salt, pepper, seasoning, garlic paste , chopped parsley , and court flour.

Using your hand make a nice soft dough. Using your palms take small portions and shape them in small balls. Now coat hem in dry flour first, second in flour paste and finally in bead crumbs.. Ensure the poppers are coated nicely with flour paste and crumbs else cheese will melt and ooze out..
Rest the balls for at least 10 mints. In refrigerator.  And then s
