Eggless Rich Fruit and Nut cake

Rakshabandhan is around and there are lots of plan to  celebrate it. Though my brother lives miles apart in Delhi, I never let die the sprite of festival... Though traditional Indian sweets compliments this festival, thought of giving it some western twist too.. And, what better could have been than a rich eggless fruit nut cake...
Loaded with dry fruits, raisins and tutti fruity..:)
3 days to go and celebrations starts today, yippyy....:) :D

This cake is an eggless cake with that extra kick of Caramel flavour and beautiful colour with no artificial flavouring and colouring.

Please have a look at the recipe..

- 1.5 cups plain flor/ maida
- 400 grams/1 tin of sweetened condensed milk
- 1/4 cup sugar
- 1/4 cup warm water
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon powder
-1/2 tsp. nutmeg powder
- 1 cup mixed dried fruits and nuts ( I used dried cherries, tutti fruity, almonds,walnuts and cashew)
- 1/2 cup butter at room temperature
- 1/2 cup of aerated soda

1. Take a pan add sugar and let it caramelise on low flame.
2. Once it's melted add warm water and stir continually. This will be little difficult but as sugar will dissolve with water it will become easier to handle. 
3. Cook this till a dropping consistency syrup is formed and let it cool.
4. In a bowl take room tempratured butter and whisk it till light and fluffy.
5. Add condensed milk and give it a good mix to form a homogeneous mix.
6. In a separate bowl sieve together flour, baking powder, baking soda, cinnamon powder and nutmeg powder.
7. In a small bowl add 1 tbsp. of this flour mix and to this add all your dried fruit and nuts and give it a good mix. This will help the nuts not sunk into the cake.
8. Now add alternatively a.) flour b.) aerated soda and c.) sugar syrup  to the butter and condensed milk mixture. 
9. Take 3 batches of each to form it a nice thick batter. 
10. Once done, add all the nuts and give it a quick mix. 
11. Pour the batter in a greased cake pan, and bake on a ore heated oven at 180 degrees for 35-40 mints. Or, till a tooth pick comes clean.
12. Take out the cake once done, and let it cool completely before slicing.

You eggless fruit and nut cake is ready to enjoy ..:)
