What would you do when you don't like a particular ingredients, but your audiences wants you to do your best with it...:)
Yes Mushroom is something that I don't like Andy don't eat. Perking with them too is a challenge for me, but it's one of the favourites with hubby and few of his friends that were visiting us one fine day. Hubby encouraged me to make one of the best a Mushrooms that one could ever have, so I was all thrilled to present Mushrooms in an absolutely new Avtar.
Made these stuffed mushrooms with stuffing of Potato, roasted nuts, cheese and spices. Marinated them and then grilled them for an amazing smokey flavour and aroma.. And voila, everyone loved the Mushrooms so much that before I could pop Lin the 2nd batch in my oven, 1st batch was gone in few seconds. :) :D
Sharing my experiences of making these yummy Stuffed Mushrooms
- 2 packs of regular Button mushrooms
For marination
- 1/4 cup thick yogurt
- 1/2 Gram flour
- 1 tsp carom seeds
- 1 tbsp of butter
- salt to taste
- 1 tsp ginger garlic paste
- 1/2 tsp turmeric powder
- 1.5 tbsp mustard oil
- 1 tsp coriander powder
- 1 tsp paprika power
- 1 tsp garam masala
- few drops of lime juice
For stuffing
- 1 medium sized boil,pealed and mashed potato
- 1/3 cup combined together dry roasted almonds and cashews
- salt to taste
- 1/3 tsp ginger garlic paste
- approx. 2 tbsp/ 2 cubes grated processed cheese
- a pinch of red chilli powder
Process
1. Take a pan heat butter and add carom seeds and cook till it Splutters.
2. Turn down the flame to minimum possible and add gram flour.
3. Cook the gram flour till it turns into very light golden brown colour.
4. Wash the mushroom in running water and pat dry them with a kitchen towel.
5. Now, with the help of scooper scoop down the mushroom and make a cavity in each one of them.
6. In a bowl, take potato, add salt, nuts, cheese garlic ginger paste and chilli powder.
7. Mix everything very well. And fill this filling in each of the mushroom generously.
8. In a separate big bowl take yogurt, add roasted gram flour.
9. Add ginger garlic paste along with all the spices except turmeric powder.
10. In a small pan heat the mustard oil till smokey. Then turn off the fame and turmeric powder to it. Stir well and add this mix to the prepared marination.
11. Mix the marination very well and add lime juice.
12. Add the stuffed mushroom to this marination, ensuring each mushroom is coated with the marination nicely.
13. Pre heat the oven at 200 degrees C.
14. Grill/bake the mushroom on same temperature for 20+ minutes, or till the crust is nice golden brown on colour.
Serve them hot with any cheesy dip,mint chutney you will just love them..:)
