Eggless Cofee Walnut Cake with a chocolate Ganache
It was a special day yesterday, one of my very dear friend I would rather call her my sister's Birthday. I had to prepare as per her,taste buds. Since she is a coffee lover, thought of making a coffee Walnut cake.
I was trying the coffee cake for the first time. Has fortunately and by god's grace found a coffee essence during by last shopping at the grocery store so wasn't worried about the result in terms of flavour and aroma..:) :)
Did a quick ganache topping with chopped walnuts and that's it. Entire cake was done in almost an hour excluding the cooling time of cake and Ganache..:)
Sharing with you all my first experience of this coffee cake.

Ingredients
For cake
- 1 and 1/4 cup plain flour/maida
- 2 tbsp instant coffee powder ( it would be great if you can arrange for freshly brewed coffee)
- 3/4 cup thick yogurt
- 3/4 cup granulated sugar
- 1/4 cup oil ( I used sunflower oil)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2-3 tbsp milk ( room temperature)
- 1.5 tbsp coffee essence
1/2 cup chopped walnuts
Process
1. Take a bowl add curd and sugar, and beat them well till the mix is creamy.
2. To this add baking powder and soda. And give it a quick mix.
3. Let the mix rest for at least 5 mints, or till you see the mix is frothy.
4. In a separate bowl sieve the flour ,Sieve this flour at least twice ( as this is an eggless preparation, this will aerate the flour and help rise the cake for perfect texture)
5. In a small bowl mix milk and cofee together.
6. Now, to the curd and sugar mix add coffee essence and oil and mix nicely till a homogeneous mix is formed.
7. Now, to this mix add the flour in 2 batches. And add the coffee and milk mix at the end to the batter and mix well.
8. Take 1 Tbsp of flour and sprinkle on half of the walnuts.
9. Mix the walnuts with flour nicely.
10. Once entire flour in eco repeated with curd and oil mix nicely, fold in the dusted walnuts and ensure not to over mix.
11. Cake batter is ready.
12. Take 8" baking pan, grease and dust with some flour.
13. Pour the cake batter and give a nice tap .
14. Bake in pre heated oven at 180 degrees C for approx. 40 minutes or till the toothpick comes clean.
15. Your sponge is ready.
Chocolate ganache
Ingredients
- 1/2 cup heavy fat fresh cream
- 200 grams of cooking/ baking Chocolate( I used combination of milk and dark compound)
- 1/2 tsp. unsalted butter
- A pinch of salt
Process
1. In a pan on medium flame, heat the cream. It should not boil, turn off the flame just before it comes to a boil.
2. Once done, add chopped chocolate to warm cream.
3. Let the cream and chocolate rest for minimum 5 minutes.
4. Now, give it a good stir, with the heat of cream chocolate will melt.
5. A smooth and creamy mixture if cream and chocolate will b formed.
6. Add butter and salt and give it a nice stir.
7. That's it, your east chocolate ganache is ready to go on your cake..:)
Glaze your cake with ganache and decorate your cake with remaining chopped walnuts, Your perfect coffee cake with walnut crunch cake is ready for any occasion...:):)
