Nankhatai/Indian Cookies

Just sitting and enjoying the rains, with Ansh, not ready to eat any biscuit. Thought of making Naankhatais which are traditional Indian Cookies, absolutely yummy and melt in mouth cookies. These are extremely easy to make with very few ingredients that are easily available in your kitchen.


Nan Khatai
Ingredients-
·         1 cup Maida/APF
·         1/4th cup Besan/gramflour
·         1/4th cup Sooji/Semolina/Rava
·         ½ cup ghee/butter (  I used homemade Ghee)
·         ½ cup Powdered Sugar
·         1 Tsp. Cardamom Powder
·         1 TSP. Nutmeg Powder
·         ½ Tsp. Baking Powder

Process-
1) Take Ghee/butter and powdered sugar and beat till very light and fluffy mixture. It will also change its color to pale yellow. 
2)In another bowl mix all the dry ingredients and mix them well.  
3)Once dry ingredients are mixed well, add the ghee and sugar mixture to it and form a soft dough. Dough would be soft enough to form shapes of the cookies. 
4)Once Dough is ready, rest it for 10 mints. Before you go ahead an bake them. 
5)Post 10 mints. Bake the round shaped cookies for 20 mints. + unless Golden brown in a  preheated oven at 180 degrees. 
6)Garnish with Almond/Pista Flakes.

# My cookies were done at approx.. 25 mints. After 20 mints. Keep an eye to avoid them burn.
#  while shaping the cookies keep enough space between them as they will rise and spread.

These were finished in no time, with Ansh gulping down 3 of them as they were super soft.
