I love Breads,  not only eating but baking too.  Whether it's a bowl of soup accompanied with a slice of freshly baked herbed bread or sandwich made with freshly baked loaf.  I love them all..  Also it is a reason to make me happy for the fact that if I mean whole wheat it is whole wheat for sure.  Whereas The store brought Breads even after saying its Whole Wheat it actually might not be.

There is no Guilt while having an extra slice of home baked Breads.
I have tried Focassia earlier but using maida/APF.  This is time I used Whole wheat flour ( Ashirvad Multigrain atta to be precise). And,  the results were overwhelming.  The bread was over in less than 24 hours.

Sharing my experience of healthy Whole wheat focassia.

Ingredients
- 1.5 cups Whole wheat flour+ some to roll and dust.
- salt to taste
- 1 tsp.  Active Instant yeast
- 1 tsp dry parsley
- 2 tsp dry rosemary
- 2+3+1 Tbsp of Extra Virgin Olive Oil (EVOO)
- I topped the bread with thin slices of onion, Tomato, capsicum and olive along with cheese.  You can choose your own toppings.
- 3/4 cup warm water
- 1 tsp sugar
1 tbsp Garlic powder
- 2-3 Garlic cloves ( finely chopped)

Process
1. Take a small bowl add warm water, sugar and yeast. Stir everything together and let. This rest for 10-12 minutes.
2. Once the yeast is bloomed nicely,  you. Will see Froth on top of the water.
3. In a separate big bowl,  take flour and mix salt,  Garlic powder and 1 tsp of rosemary to it.
3. Now make a small well and put the yeast water in it.
4. Slowly start Mixing the flour to. Yeah water. And eventually you will. Have a very sticky dough.
5. Now,  add 2 Tbsp of oil and knead the dough nicely for at least 10 minutes.  The dough after kneading will be little firm than earlier,  but Stills sticky and soft.
6. Take few Drops of oil And grease the bowl and the dough.
7. Place the dough in the greased bowl,  and cover with a kitchen towel or. Cling. Wrap.  And place it on a warm spot.  Switched off Microwave or oven preferably for 1-1.5 hour till the dough doubles.  Depending Upon the whether the time. To Rise the dough will. Vary.
8. Once dough is ready,  punch the same. And deflate the air.  Using some dry Flour knead the dough for another. Minute or so.
9. Now,  take at least 10 inch baking try and grease little with oil. 
10. Place the dough in greased tray and start spread g the dough using using palm and finger tips.
11. Once done,  again cover the tray with kitchen towel. And place the same on warm spot for Second proving.  This time we need not necessarily want the dough to double but rise to at least 50% more to its original size.
12. In the meanwhile we will. Prepare our herbed olive oil. Heat 3 Tbsp of olive oil in a small pan.  Once heated then off the flame. 
13. Add chopped garlic,  rosemary and parsley. Mix well and herbed old is ready.
14. Once the dough in tray is ready at distance of approx.  4 inches put dimples on the bread dough using your finger.  If you do feel the dough is sticking. To. Your hand,  grease it with oil a little. Once done,  evenly brush/ sprinkle the heroes pil prepared in step above. 
15. At the end,  top it with desired veggies and cheese if you want.
16. Bale it in a preheat oven  At 180 degrees ( both pre hearing. And baking) C for approx.  25 minutes.  Or till the upper Crust becomes nice golden brown.
17. Once done,  let the bread Cool before Slicing..

Serve with hot soup,  make Sandwiches or enjoy just like That... :-)
