Whole Wheat Gond/ edible gum cookies

We had lunch out recently, where as a small surprise we arranged for an ingredient swap activity. I got Gond to my kitty. And we all decided that everyone has to prepare a new and innovative dish out of that ingredient. 
Gond is generally used to prepare ladoos in Northern part of India. Gond is essentially warm and helps to keep your body immune for excessive cold in winters. Gond is also given to pregnant females as it is considered good for both mom and baby.

Ladoos was something already knew to be associated with Gond, I thought of doing something new. And I decided to make whole wheat cookies using them.:)

Ingredients
- 1 cup whole wheat flour
- 1/2 cup ghee
- little more than 1/4 cup is sugar
- 3 tbsp of Gond
- 2 tsp. of cardamom powder
- pista/almond flakes for garnishing


Proces
Take 1/2 tbsp of ghee and on low flame roast Gond in it, once fine keep aside and let it cool. Once cooled in a grinder make coarse powder. In a big bowl add sugar and remaining ghee and beat till light and fluffy. Tp to this add flour, cardamom powder and Gond powder. Mix well and prepare a dough. Do not over knead the dough. Take small portions if the rough and make small balls, and press between you palms a little. Garnish with nut flakes. Bake in a pre heated oven at 180 degrees for 20 mints and further keep an eye and adjust time till cookies are nice golden brown in colour.. 















Your whole wheat Gond cookies are ready.. Trust me it will literally melt in your mouth.. :)
