Eggless Tutti Fruitti Cake 





Being last day of 2014, we all look back at the experiences that we had in this year. Few good others not so good, few exciting while others little disappointing, few memorable while others which we don't want to remember forever... While we experience a lot in matter of these 365 days, we have our own set of learnings and take forwards to the future from these experiences. This year my culinary journey started and Chhapanbhog my Blog, my dream happened to me. Since July 19th the inception of my blog, there has been no looking back. 

Did a lot, from home baking to chocolates making projects, I also arranged for a birthday party snack for almost 100 kids.  Every new thing. Fought an experience and challenge to me. Today, when I looks back everything looks so inspiring and exciting..:)

On the last day of 2014, I thought of making this eggless colourful tutti fruitti cake with you all. This was absolutely yummy, moist and perfect for kids and adults would enjoy it too with a a hot cup of coffee in these chilling wingers days..

I am taking this sweet cake loaf to the golden jubilee party at Angie' Fiesta Friday,  hosted by lovely Selma and Sue...  I am glad to share this on this Special 50th FF..  :-) <3

Ingredients
- 1and 1/4 cup plain flour/ Maida
- castor sugar 1/2 cup 
- 1/2 cup thick yogurt
- 1/4 cup cooking oil/ you may also use butter
- 1 tbsp mixed fruit essence / you may also use vanilla essence
- 1/2 cup mixed coloured tutti frutti
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- some butter for greasing the loaf pan

Process
1. Pre heat the oven at 180 degrees C
2. In a bowl take together sugar and curd. Mix them well until all the sugar is dissolved.
3. Once done, add mixed fruit essence and oil/ butter . And mix together well till everything is incorporated well.
4. Now add baking powder and baking soda and give a quick stir. 
5. Let this mixture rest for at least 10 minutes.
6. In a separate Bowl, sieve the flower at least twice to aerate the flour.
7. In a small bowl take together 2 tbsp of flour and drop tutti frutti in this.  Mix them well so that off the tutti fruitti is coated nicely with dry flour.
8. Now, check the curd mix it will be nice and frothy.
9. In this wet mix add flour and mix thoroughly.
10. Once done, added tutti frutti and quick mix.
11. Cake batter is now ready. Pour the cake batter in greased loaf pan.
12. Bake in preheated oven for 35+ miutes or till a toothpick comes clean.

Let the loaf Cool before you slice. Your yummy cake is ready to enjoy... :)
