Paneer Tikka Platter/Grilled Cottage cheese a platter



Hubby being big fan of paneer/ cottage cheese, as the weekend arrives I think of what new can be done with paneer this time. One fine weekend accompanied with rainy and cozy evening, and some very close friends visiting us, I had planned to rock the evening with these Grilled Cubes of smokey flavour and absolutely spicy treat.
Paneer Tikka is basically a North Indian appetiser very famous in Punjab. But, it's so delish that it is loved all across,the globe. 

I prepared 3 different kind of marination which were the regular, Malai  Paneer tikka, Garlicy paneer tikka and minty paneer tikka. Though all the guests that day along with happy were praising all 3 of them, my pick from the platter were the Garlicy ones. Absolutely soft, smokey flavour, perfect blend of spices and garlic.

I am Sharing all 3  flavours today:)

1. Classic Masala Paneer paneer Tikka

 Ingredients
- 1/4 cup thick yogurt
-1/2 cup gram flour
- 1 tsp. of Carom seeds
- 1/2 tbsp of butter
- 1.5 tbsp,of mustard oil
- 1 tbsp of Peprika powder
- 1/2 tbsp of lime juice
- salt to taste
- 1 tsp coriander powder
- 1/2 tsp Garam masala
- 1tsp chat masala
- 1 tsp ginger garlic paste 
- 200 Grams cubed cottage cheese/paneer
- few cubes of onion
- few cubes of capsicum/ bell pepper

Process
1. In a pan heat butter and add carom seeds till it splutters.
2. Turn down the flame to lowest and add gram flour.
3. Roast the gram flour till it changes its colour to very light brown. Once done. Turn off the flame and let it cool to room temperature.
4. In a bowl take curd, and add Gram flour. Mix it well.
5. Add, all the spices along with ginger garlic paste ( salt, Garam masala, coriander powder, Paprika powder, chat masala and mix the paste well)
6. Now add lime juice to the marination and mix well. 
7. In small pan heat the mustard oil till smokey and then turn off the flame, add this hot oil to the marination and mix well.
8. Now, add cottage cheese along with onion and capsicum to the marination and ensure each cube is well coated with the marination.
9. Keep this in cool place preferably refrigerator for minimum 2 hours before you proceed to grill them.
10. Using any pattern you can screw them in a skewer and grill them in oven at 200 degrees C in a pre heated oven for 20+ minutes or till you see thrust with nice golden colour.

2. Garlicy Paneer Tikkas

Ingredients
- 1/4 cup thick yogurt
- 1/2 cup roasted gram flour ( as explained in steps 1,2 and 3 above)
- 1 tsp ginger garlic paste
- 3-4 finely chopped Garlic cloves
- 1 tsp garlic powder
- salt to taste
- 1 tsp chat masala
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp Garam masala
- few drops of lime juice
- 200 grams cubes paneer
- few onion cubes
- few capsicum cubes

Process
1. In a bowl take roasted gram flour, and add Yogurt to it.
2. Mix it well and all ginger garlic paste along with freshly chopped garlic.
3.now add all the spices  ( salt, coriander powder, Garam masala, chat masala, turmeric powder and garlic powder) mix everything well.
4. Now, add lime juice to thwart atom and mix well. 
5. Add paneer, capsicum and onion cubes and let them marinate in refrigerator for minimum 3 hours before you go,ahead and grill them.
6. Grill/bake them with same process as explained in step # 9 and 10 above.

3. Minty Paneer Tikkas

Ingredients
- 1/2 cup roasted gram flour ( as explained in step 1,2 and 3 in process 1)
- 2-3 tbsp of thick yogurt
- 1/3 cup of fresh mint leaves
- 1/4 cup of freshly chopped coriander leaves
- few tbsp of water
- salt to taste
- 1 tsp,of coriander powder
- 1 tsp of Garam masala
- 1 tsp of Peprika powder
- few drops of lime juice
- 1 tsp of ginger garlic paste
- 200 grams  of cubed Paneer
- few cubes of onion
- few cubes of capsicum

Process
1. Take a blender jar add mint leaves and coriander leaves along with few tbsp of water and grind it ti to nice smooth paste. 
2. In a bowl take roasted gram flour, and add Yogurt to it along with mint and coriander paste .
3.Mix it well and all ginger garlic paste along with freshly chopped garlic.
4. Now, add all the spices  ( salt, coriander powder, Garam masala, chat masala and Peprika powder) mix everything well.
4. Now, add lime juice to thwart atom and mix well. 
5. Add paneer, capsicum and onion cubes and let them marinate in refrigerator for minimum 3 hours before you go,ahead and grill them.
6. Grill/bake them with same process as explained in step # 9 and 10 in process 1.

Serve with mint coriander chutney or just like that with thinly sliced onion, this will turn your party into a rocking one...:) :)
